Vineyards: 100% Clairault Vineyard, Wilyabrup
Growing: Located in the Northern end of Wilyabrup with Forest Grove soils, the Clairault Vineyard is one of Margaret River’s earliest established vineyards. The Houghton clone cabernet sauvignon featured within this wine is selected from our 45 year old vines, known for their complexity and distinct characteristics.
Winemaking: The fruit is harvested, de-stemmed and crushed, so that each berry is just split. This is to ensure minimal berry degradation during the fermentation process and to promote fresh, clean flavour. Our ferments are cool and gentle, allowing slower, more controlled extraction of tannin and flavour. The wine was aged in French oak barriques for 10 months before bottling.
Vintage: A warm and dry growing season with timeous top ups of rain has led to whites of unprecedented purity balanced with formidable power, and reds boasting intense red and blue fruits with striking yet supple tannin and structure.
Aroma: Black currants, glazed cherries, violets and mulberries. Subtle hints of cocoa, graphite and mocha.
Palate: Broad swatches of black berries and graphite, coating and velure, underpinned by lashings of utterly firm tannin, and softened by earthen tones of granite. A finish of glazed cherries, violets and blue berries, pure and unyielding.
Cellaring: Enjoyed for its freshness now, or cellar for up to 10 years for added complexity.
