19.4% Semillon

Growing

Sauvignon Blanc and Semillon are machine harvested in the middle of the night on separate dates according to their flavours and natural acidity.

Winemaking

A portion of the cuvee is fermented in stainless steel at low temperatures to preserve freshness and aromatics, while around 20% of the cuvee is fermented in French oak barriques to provide textural and complexing elements. When fermentation was complete, the wine was then aged on its lees before bottling in July.

Vintage Conditions

The 2025 vintage followed a welcome wet winter that replenished groundwater across the region. With careful canopy management and selective fruit thinning, whites such as Chardonnay and Sauvignon Blanc delivered lower yields but excellent concentration and ripeness. Reds thrived under mild ripening conditions, showing great colour, supple tannins, and rich fruit character. Overall, the season produced wines of depth, balance and vitality.
